Ingredients
4 cod fillets
Salt and pepper to taste
2 tablespoons olive oil
1/4 cup all-purpose flour
4 tablespoons unsalted butter
2 cloves garlic, minced
Juice of 1 lemon
2 tablespoons fresh parsley, chopped
Directions
Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Dredge each fillet in flour, shaking off any excess.
Place the fillets in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
